Ingredients
For the apples:
- 2 cups apples, cored, peeled, and diced (I used a combination of granny smith and gala apples)
- 1/4 cup light brown sugar
- 1 teaspoon ground cinnamon
For the muffins:
- 3 cups all-purpose gluten-free flour, like mine!
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 tablespoon pumpkin pie spice
- 1 additional teaspoon ground cinnamon
- 1 15-ounce can pumpkin puree (not pie filling)
- 1 1/4 cup light brown sugar
- 1/2 cup granulated sugar
- 4 large eggs, room temperature
- 1/2 cup vegetable oil (like Canola)
- 1/3 cup 2% or whole milk, room temperature
- 1 teaspoon vanilla extract
For the streusel:
- 1 1/3 cup gluten-free all-purpose flour, like mine!
- 1 cup light brown sugar
- 2 teaspoons pumpkin pie spice
- Pinch of kosher salt
- 1 1/2 sticks butter, cold
For the glaze:
- 1 1/2 cups confectioners sugar
- 2 tablespoons maple syrup
- 1–2 tablespoons milk
